Puerh

Puerh is an aged tea which usually comes from the Yunnan province in China. The tea is unique in that it is usually compressed into bricks, cakes or bowls and seems to develop more nuanced and delicious flavors over time. Like wine. There are two basic kinds of puerh: (sheng) raw or green and (shu) cooked or black. Sheng puerh can age 10-20-30 years before it gets really good. This tea is definitely a candidate for the slow food movement too since it is sort of alive and needs to be exposed to the elements and the changing of seasons, temperature, humidity and other climatic variables to develop nicely.
